Awesome waffle recipe
Mar. 2nd, 2009 11:31 pmFor my own reference, or yours if you have a waffle maker, a great waffle recipe that is nutritious AND tasty:
2 eggs, beaten
1.75 cup milk
.25 cup oil/butter and .25 cup unsweetened applesauce/pureed pumpkin OR 6 tb applesauce/pumpking 2 tb oil/butter OR .5 cup applesauce/pumpkin
vanilla extract to taste
1.25 cups whole wheat pastry flour
.5 cups flax seed meal
.24 cups wheat germ
4 ts baking powder
1 tb sugar
.25 ts salt
Mix wet ingredients until well blended. Mix dry ingredients in separate bowl. Beat dry ingredients into wet until smooth. Cook in waffle iron. TASTY.
It makes about five waffles but, if you're me, the first waffle is always ruined.
I had them with yogurt and raspberry sauce, made with frozen raspberries. Which I have leftovers of, clearly requiring me to purchase vanilla ice cream.
1 bag frozen raspberries, thawed
.5 cup white/turbinado sugar
dash of orange juice (probably about 2 tb)
Two spoonfuls (approx 2 tb) of corn starch completed blended in about .5 cups of cold water
Put ingredients in saucepan and slowly bring to a boil. Stir while it boils until it's as thick as you like it. Cool slightly before serving. Possibly eat with spoon -- who needs a waffle?

OR

If so, any suggestions for picking one? I am tempted to try this despite knowing bugger all about cooking, but I have no frame of reference for making a selection from among these choices. Similarly, I have no idea what "to taste" would mean for me re: vanilla extract. What amount translates to "I like vanilla just fine"? =:)

They're pretty easy and definitely tasty!
